Taste the season — Oro de Plata & the Mexican Cuisine

Spring tastes different at our table.

Not heavy.
Not slow.
But bright. Precise. Alive with citrus and heat.

As the days grow longer in Petaluma Gap, we reach instinctively for wines that mirror the season — lifted, mineral, clear. Oro de Plata has always been that wine.

Built for Brightness

Oro de Plata means “gold from silver” — golden Chardonnay fermented entirely in stainless steel. Since 2003, we’ve chosen clarity over weight, freshness over embellishment. No oak. No malolactic fermentation. Nothing that softens the natural edge of the fruit.

The result is structure defined by tension and acidity. A wine that feels linear and focused, with citrus at its core and a mineral finish shaped by wind and fog.

That precision is not just a stylistic choice. It’s what makes Oro de Plata a natural companion at the Mexican table.

The Architecture of Contrast

Mexican cuisine is built on balance.

Heat and freshness.
Smoke and lime.
Char and herb.

Aguachile sharpened with serrano and cilantro.
Ceviche just lifted from citrus.
Tacos al pastor where sweetness meets fire and a final squeeze of limón ties it all together.

These dishes are vibrant, layered, and alive. They demand a wine that refreshes without overpowering, that cleanses without flattening.

Oro de Plata mirrors that architecture.

Its citrus core cuts through spice.
Its mineral edge amplifies green herbs and salsa verde.
Its restraint balances richness without adding weight.

Where oak would soften, stainless steel preserves.
Where butter would blur, acidity sharpens.

This is Chardonnay designed for contrast.

A Cultural Continuity

For our family, wine and culture have always moved together.

Our Mexican heritage lives not only in the names of our wines, but in the rhythm of our table — where meals are shared slowly, flavors are bold, and lime and chile are constants.

Oro de Plata belongs there.

It carries the cool winds of Petaluma Gap into dishes shaped by heat and citrus. A bridge between vineyard and kitchen. Between California light and Mexican tradition.

What’s in the Glass

  • Nose: Jasmine, Meyer lemon, white peach, and wet stone.
  • Palate: Grapefruit zest and lime layered over stone fruit. Clean, energetic, precise.
  • Finish: Long and mineral-driven. Nothing to hide behind.

This is Chardonnay without butter.
Without toast.
Without excess.

Just clarity.

Pour for the Season

As winter gives way to open windows and outdoor tables, the wine we crave shifts. Heavier reds step aside. Freshness takes the lead.

Pour Oro de Plata alongside ceviche, aguachile, grilled seafood, or tacos al pastor. Or simply enjoy it as an aperitif before the meal begins — crisp, clean, and alive.

Spring does not ask for weight.
It asks for light.

Gold from silver.
Flavor from contrast.
Season from intention.

Taste the season.
