What Is PetNat and How Is It Made?
Pétillant Naturel: The Original Sparkling Wine
Before sparkling wine became synonymous with ceremony, precision, and polished tradition, there was Pétillant Naturel.
Known more casually as PetNat, short for Pétillant Naturel, this style of sparkling wine is made using one of the oldest and most direct methods of creating bubbles in wine. It is lively, expressive, and beautifully uncomplicated.
At Keller Estate, our PetNat is made from estate-grown Pinot Noir, giving it a fresh and playful character that feels distinct from our more classic sparkling wines.
Traditional sparkling wines, such as Champagne-method wines, are made through a carefully controlled two-step process. First, the base wine is fully fermented. Then, it is bottled with additional sugar and yeast to create a second fermentation inside the bottle. This method produces refined bubbles, structure, and elegance.
PetNat follows a different path.
Instead of waiting for fermentation to finish, the wine is bottled while it is still actively fermenting. The natural yeasts continue their work inside the bottle, creating bubbles from the original fermentation. There is no second fermentation, no added ceremony, and no unnecessary intervention.
The result is a sparkling wine that feels more spontaneous, textured, and expressive.
Our 2025 PetNat takes Keller Estate Pinot Noir in a new direction. While our Corazón Rosé of Pinot Noir is still, crisp, and polished, the Pét-Nat captures a more playful side of the same grape. It offers bright red fruit, citrus notes, a subtle hint of bread dough, and lively natural bubbles.
It is settled, clear, and easy to love, but it keeps the wild charm that makes PetNat so distinctive.At its heart, PetNat is a reminder that great wine does not always need formality.
