Before It Became Precioso
A story of place, harvest, patience and the barrels worth setting apart.
A bottle of wine can make the process behind it feel deceptively simple.
You open it. You pour. You taste.
But long before Precioso reaches the table, there is a vineyard moving through a season. Fog settling over the Petaluma Gap. Wind moving through the vines. Fruit tasted and watched. A harvest decision made at exactly the right moment.
Then, the work moves inside.
And slowly, barrel by barrel, the wine begins to reveal what it can become.
It begins with the vineyard
At Keller Estate, wine begins with place.
The Estate sits along the southern reaches of the Petaluma Gap, where Pacific winds and dense fog shape the growing season and contribute to wines defined by freshness, aromatics and balance. The soils beneath the Estate come from an ancient seabed, with mineral-rich clay that has become part of the character of the wines grown here. KE 2022 Pinot Noir Precioso
For Precioso Pinot Noir, that story is rooted in La Cruz and El Coro, two vineyards within the Estate that express the Petaluma Gap in distinctly different ways. KE 2022 Pinot Noir Precioso
Before there is a finished wine, there is simply the possibility of one.
Harvest captures the moment
During harvest, timing becomes everything.
The 2022 Precioso Pinot Noir was picked at night, allowing the fruit to arrive at the winery cool the following morning. The grapes were destemmed as whole berries before fermentation in open-top fermenters, with a combination of punch downs and pump overs guiding the process. KE 2022 Pinot Noir Precioso
These are technical decisions.
But they are also acts of restraint.
The goal is not to overpower what came from the vineyard, but to protect it—to allow fruit, structure, aromatics and place to remain present as the wine evolves.
Then comes patience
Once fermentation is complete, the pace changes.
The wines move into barrel and rest in Keller Estate’s cave, where they continue developing through malolactic fermentation and months of aging. For the 2022 Pinot Noir, that period ranged from 11 to 18 months.
This is where attention becomes especially important.
Individual barrels evolve differently. Some show more perfume. Others more structure, texture or depth. The winemaking team tastes, observes and waits.
There is no rush to decide what Precioso will be.
The wine has to reveal it first.
Precioso is the selection
Precioso is not simply another step in the process.
It is the edit.
For the 2022 Pinot Noir, the final wine was created as a reserve barrel selection from La Cruz and El Coro—a choice made from individual barrels after the vintage had begun to show its character. KE 2022 Pinot Noir Precioso
That idea sits at the heart of Precioso.
The vineyard creates the possibilities.
Harvest captures the moment.
The cellar reveals the details.
Precioso is the final selection.
It is the point where farming, winemaking and intuition meet.
What reaches the glass
In the 2022 Precioso Pinot Noir, that journey results in a wine with floral notes of hibiscus and lavender, followed by black cherry, black currant and cranberry. Baking spices sit behind the fruit, while malolactic fermentation contributes a creamy quality to the palate. Supple tannins carry the wine through a long finish. KE 2022 Pinot Noir Precioso
But tasting notes only tell part of the story.
What makes Precioso meaningful is everything that came before them: the vineyard, the vintage, the decisions in the cellar and the willingness to wait until certain barrels distinguished themselves.
Because sometimes the most important part of making wine is knowing what to leave alone.
And sometimes, it is knowing what deserves to be set apart.
From our Estate to your table
Precioso begins in the Petaluma Gap, but its story is completed somewhere else entirely: around the table.
Opened over dinner. Shared between friends. Poured slowly enough to notice how it changes in the glass.
The work may begin in the vineyard and continue in the cellar.
But ultimately, Precioso was made for this.
