The Pétillant Naturel of Pinot Noir, or Pet-Nat, is made using one of the oldest and most direct methods of creating bubbles in wine. Instead of waiting for fermentation to finish, the wine is bottled while it is still actively fermenting. The natural yeasts continue their work inside the bottle, creating bubbles from the original fermentation.
This 2025 vintage is a beautiful salmon-colored sparkling wine, opening with vibrant aromas of fresh strawberries, hibiscus, and Satsuma. Its subtle pink haze and super fine mousse reveal a fun, creamy, yet refined texture. Flavors of guava, red berry, and kumquat are layered with delicate yeasty notes, while fine bubbles create a light, refreshing finish.
